One of New York’s finest dumpling shops shut its doors recently, but tons of other restaurants across New York City still offer fantastic versions of the dish. The term dumpling, of course, applies to foods in a variety of cultures. To keep things tight — and as a bit of an homage to the recently closed Lam Zhou — this guide will look only at Chinese dumplings, particularly guotie (pan-fried dumplings) and jiaozi (boiled ones). Soup dumplings deserve a category of their own and do not show up on this list; look out later for a guide to those.
