A Spoonful of Sofrito: Perfect fried Chicken Sandwich!

A Spoonful of Sofrito:  A pinch of advice that will add a lot of flavor to your life.

Perfect fried Chicken Sandwich!

Sofrito Lovers,

The Fried Chicken Sandwich is truly a work of art! There are many styles and versions of this sandwich, which have their merits, but the classic potato roll, pickles, and special sauce combo can't be beat!

Check out the post below from the Institute of Culinary Education and learn how to make this simplistic, yet incredible little snack! Quick, simple, and delicious-just how I like it!

Go taste for yourself! ¡Buen provecho!

The fried chicken sandwich, by law, may only contain bread, chicken, pickles and sauce. Never mind which law that is — the point is this: if you try to put anything more on my sandwich, we are going to have problems. With just four components to build it out, this sandwich is perfect in its simplicity, so each ingredient that goes into it better be perfect, too. Any missteps or half measures are going to stand out big time and completely throw off your chicken sandwich mojo.

A Spoonful of Sofrito: Aspira Collecting food for Puerto Rico!

A Spoonful of Sofrito: A pinch of advice that will add a lot of flavor to your life.

Aspira Collecting food for Puerto Rico!

Sofrito Lovers,

Millions in Puerto Rico have been left homeless, without electricity, and without food.  An old friend of mine that works for Aspira of New York has asked me to help spread the word about their donation drive.

She asked me to stress they need for food donations in particular!  Check out the post below and give generously!  We foodies have a long history of charitable activities, especially in support of people that have become food insecure and food unstable!  Please donate and inspire others to follow suit!

A Spoonful of Sofrito: Cuban Elena Ruz Sandwiches!

A Spoonful of Sofrito: A pinch of advice that will add a lot of flavor to your life.

Cuban Elena Ruz Sandwiches!

Sofrito Lovers,

Have you ever heard of an Elena Ruz sandwich?  Yeah, neither have I!  Apparently, this little Cuban American beauty has evaded my Cuban cuisine loving ass for the longest.

It's a Cuban or Cuban American sandwich (I can't figure out which) that is prepared by spreading cream cheese and guava or strawberry jam or jelly on toast, then adding slices of turkey.  Weird, yet tantalizing right? At first mention, the recipe sounds gross, but if you think about it, the salty, savory, and sweet combo of it all becomes quite intriguing.

Check out the video below from We are Mitú and try out the recipe for yourself!  I'm running to my local bodega tomorrow to get some guava jelly and maybe some pan sobao to make my Elena Ruz.  I'm still trying to figure out why it's called an Elena Ruz, let me know if you do!

Check it out, go taste for yourself, and Buen provecho!
