A recipe for Turkey Picadillo!

Now that David is back home, I've become a weekend Top Chef again!  Last night, I decided to cook up a Turkey Picadillo (Spiced Ground Turkey made Cuban style) for my BearBear!  He spent 6 months on tour, hopping from hotel to hotel, eating room service fare, fast food, and take out!  Needless to say, my poor Bear needs some home cooking STAT!

This recipe from Platings and Pairings really hit the spot, my Bear loved it! There's nothing like cooking for my bear!  Seeing his eyes light up when its done and watching him enjoy every bite makes all the shopping, lugging around, preparing, cooking, and serving all the more satisfying.  

Nothing makes me happier than making sure that David has a belly full of good food!  Watching him clean the kitchen and washing the dishes after dinner is a pretty close second!

TURKEY PICADILLO

COOK TIME: 15 MINUTES 
TOTAL TIME: 25 MINUTES

Ground turkey is simmered in a blend of spices, olives, capers and golden raisins for an authentic treat that takes less than 30 minutes.Print

INGREDIENTS

1 tablespoon olive oil
1 1/4 pounds Foster Farms Organic Ground Turkey
1 yellow onion minced
1 red bell pepper chopped
4 cloves garlic minced
2 leaves bay
½ cup white wine or dry vermouth
1 oz can tomato sauce 
1/3 cup chopped pimento stuffed green olives plus 1 tablespoon brine
1/3 cup yellow raisins
½ cup canned black beans
1 tablespoon capers
2 teaspoons cumin
1/2 teaspoon cayenne or to taste
Salt and pepper to taste

INSTRUCTIONS

Heat olive oil in a large skillet over medium-high heat. Season the turkey with salt and pepper and cook until browned, breaking it up with a wooden spoon. Drain the turkey and set aside in a bowl.

Return the same skillet to the burner, and reduce the heat to medium. Add the onions, bell pepper, garlic and bay leaves. Cook, stirring occasionally until the onion is softened and translucent. Return the cooked turkey to the skillet, and add the wine, tomato sauce, olives and brine, raisins, black beans, capers, cumin, and cayenne. Simmer for 15 minutes. Season with salt and pepper, to taste. 

Serve warm with rice, or as a taco stuffing.
