A Spoonful of Sofrito: Puerto Rican Pork and Veggie Soup!

A Spoonful of Sofrito: A Pinch of advice that will add a lot of flavor to your life.

Puerto Rican Pork and Veggie Soup!


Sofrito Lovers,

As you all should know by now, I am a weekend chef and this past Saturday night I prepared a delicious Puerto Rican style Pork and vegetable soup to die for!  I pieced this recipe together using an old pork soup recipe,  YouTube cooking techniques, and my own individual tastes-I love soups to be hearty and full of veggies.

Sopa de carne de cerdo/Pork and Veggie Soup


Ingredients:

1 pound of stew pork
1 medium chopped onion
½ green pepper
2 ajices ducles
1 large carrot
2-3 minced garlic cloves
3 potatoes
1 platano
1 chayote
1 small cilantro bundle

2 Tbsp of Sofrito
1 packet of Goya Jamon (ham) seasoning
½ can of Goya tomato sauce
2 Tbsp of canola oil
8-10 cups of water
1 Tsp of cumin
1 Tsp of Oregano
1/4 Tsp of black pepper
1 tsp of Adobo
Packet of Sazon
Salt for taste

1/2 bag of fideos 

Directions:

Rub dry rub on pork and refrigerate covered foran hour or overnight.

Heat 1 tablespoon of canola oil under medium high
heat and brown meat on both sides.

Once the meat is brown, then add water and add jamon packet.  
Let the mixture boil and then lower to medium-low, cover, and boil for 30-40 minutes.

Ina separate pot, heat 1 Tbsp of canola oil under medium high
heat and add onions, green pepper, cilantro, garlic, ajices dulces, and
sofrito and cook until translucent.  

Once translucent add tomato sauce and stir together
until well coated (2-3 minutes). Add mixture to the boiling pot of pork. 

Add the carrots and taste for salt and then add Packet of Sazon.  Cook for 10-12 minutes and then add chopped potatoes, chopped platano, and chopped chayote and cook for another 10-12 minutes.

Add fideos and cook for 5-10 minutes.

Serve with rice.
