Puerto Rican Style Beef and 
Veggie Soup!



Sofrito Lovers,

Last night, I decided to create my own recipe and it turned out amazing!  I wanted to make a nice hearty soup with tons of veggies (my bears needs to eat more veggies) and a nice cut of meat.  I used a nice packet of stew beef and crafted a delicious Puerto Rican Style Beef, Veggie, and noodle soup recipe. 

It was fun and easy!  I combined some cooking techniques, ingredients, and decided to explore!  David loved the soup, he said it was delicious!  I loved it as well!

Puerto Rican Style Beef and Veggie Soup!


Ingredients:
Box of Fideos (optional)
1 small packet of stew beef
1 large potato
1 large platano
1 large carrot
1 small onion
1 packet of mushrooms
Small can of corn
3 or 4 stalks of scallions
1 medium zucchini
2 tomatoes
Cilantro
Frozen Broccoli 
Any other raw or frozen veggies
8 cups of water


Seasonings:
1½ cubito de res
1 Tsp. garlic powder, oregano, onion powder
½ Tsp pepper
½ Tsp cumin
Salt and pepper to taste


Directions:
Bring water to a boil and then add beef and Calabaza.  
Bring back to a boil. Cover pot lower heat to Medium-Low a
nd cook for about 1 hour.

Add cubitos de res, onion powder, oregano, garlic powder,
and ¼ Tsp. of cumin and black pepper and mix. 

Add potatoes, platano, and carrots bring back to a boil.  
Add more water to cover veggies!

Add onion, zucchini, mushrooms, broccoli, corn, and
any other veggies and bring to a boil.

Turn down heat to low, cover, and simmer on low
for about 30 minutes.

Add fideos (optional), cover, and cook for another 10
Minutes until noodles are tender.
