Having opened this past Saturday, Bo's is the brainchild of Andrew Martinez and Ashley Dikos, who have stated numerous times that they couldn't find a decent bagel in Harlem.

Harlem-born bagel shop Bo’s Bagels has opened its brand new bagel retail shop. Andrew Martinez and Ashley Dikos started making the bagels when they couldn’t find a bagel they liked in Harlem. After selling from a stand for a while, they decided to open up a permanent outpost at 235 West 116th St. It will have a limited menu until the grand opening on Saturday, March 25. Local blog, Harlem Bespoke considers their bagels one of the top three in the entire city
